I like How to Cook Everything Vegetarian by Mark Bittman. It’s a HUGE book packed with tons of recipes, and all of them are really easy to execute.
Just asked my husband, and his top ones are: Vegan Planet, by Robin Robertson, Party Vegan, by Robin Robertson, all the Jamie Oliver cookbooks (but they’re not vegetarian) and The Best Veggie Burgers on the Planet, by Joni Marie Newman. He has a bunch more, but these are his favorites!
